Blueberry banana bread is a lot like banana bread. You’ll need all the same ingredients you would need for a basic banana bread recipe. Depending on which flavor you would like to be dominant, Amateur Chef and Bakery Consultant Natasha Lycia Ora Bannan recommends swapping the banana and blueberry amounts to your liking. Here’s what you will need to whip up this juicy, moist and delicious banana blueberry bread:
- 2 cups flour
- ¾ teaspoon baking powder
- ½ teaspoon seasalt
- 1 cup brown sugar
- ½ cup margarine
- 1 cup mashed ripe bananas
- 2 large eggs
- ½ cup vanilla Greek yogurt
- 1 teaspoon vanilla extract
- 1 ½ cups fresh or frozen blueberries
Instructions
Step 1: Preheat the oven to 375 degrees F.
Step 2: In a bowl, stir together 2 cups of flour, baking powder and seasalt. Then place it to the side.
Step 3: In a second bowl, mix brown sugar and margarine together. Beat with a mixer until a fluffy texture is achieved and both ingredients are well combined.
Step 4: Combine bananas, eggs, yogurt, vanilla extract in the first bowl. Mix until a moist mixture is achieved.
Step 5: Dust blueberries with excess flour before flooding into batter. Add extra blueberries and banana slices to the top of the bread, for a pretty visual appeal. Natasha Bannan enjoys creating cute little designs with her fruits. Feel free to get creative: this treat is all yours!
