Take your banana pudding up a notch with Natasha Lycia Ora Bannan’s Banana Bread Pudding Parfait! This tasty treat is perfect for on-the-go breakfast or as an additional dessert for your upcoming holiday festivities:

Here is everything you will need for Natasha Lycia Ora Bannan’s banana bread pudding parfait. Chances are, if you’re a banana lover like Natasha, you already have these ingredients in stock!
- ¾ cup brown sugar
- ¼ cup cornstarch
- ½ teaspoon sea salt
- 6 egg yolks
- 3 ½ cups almond milk
- 2 tablespoons salted butter
- 1 tablespoon vanilla extract
- 4 bananas
- 5.3 oz shortbread cookies *
*Alternatively, if you would like to use a pre-baked banana bread that you already have at home, that will work just fine! You may substitute the shortbread cookies for your homemade banana bread.*
Instructions
Step 1: Whisk sugar, cornstarch, sea salt and egg yolks together in a medium saucepan. Whisk in milk as you bring the mixture to simmer. Stir frequently over medium heat.
Step 2: After approximately 5 minutes, reduce the heat to low and whisk constantly until the mixture thickens. Remove from heat after about 2 minutes of whisking.
Step 3: Fold in butter and vanilla extract. Then transfer the mixture to another bowl, off of the heat.
Step 4: Chill in the fridge for a few hours, or until cool.
Step 5: Once your pudding has cooled down completely, remove it from the fridge. In a separately medium mixing bowl, whip up your heavy cream to make heavy whipping cream. Add in sugar until the cream holds.
Step 6: Add a dollop of pudding and cream in parfait glasses. On top of that, add your cookie or banana bread pieces along with a layer of sliced bananas.
